Honey & Orange Glazed Baby Carrots Salad



Baby carrots glazed in honey and orange sit on a bed of mixed greens. Almonds, feta cheese, and dried cranberries are sprinkled on top of the salad. It has just the right amount of sweet, sour, and salty flavors.

Ingredients:

  • 1 lb baby carrots
  • 2 tablespoons honey
  • 1/4 cup fresh orange juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup dried cranberries

Instructions:

Preheat your oven to 400F 200C

In a bowl, whisk together honey, fresh orange juice, olive oil, salt, and pepper

Toss the baby carrots in the honey-orange mixture until they are well coated

Place the coated carrots on a baking sheet and roast them in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized

While the carrots are roasting, prepare the salad by mixing the salad greens, sliced almonds, crumbled feta cheese, and dried cranberries in a large bowl

Once the carrots are done, let them cool slightly, then add them to the salad bowl

Drizzle any remaining honey-orange glaze over the salad

Toss everything together gently to combine
