Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup chopped mix-ins chocolate, nuts, cookies, etc
Instructions:
Slowly bring the heavy cream, whole milk, and sugar to a boil in a saucepan over medium-low heat
Whisk the egg yolks in a different bowl until they are smooth
As you keep whisking, slowly pour about half of the hot cream mixture into the egg yolks
This will temper the eggs
While stirring all the time, pour the egg mixture back into the saucepan with the rest of the cream mixture
For another 5 to 7 minutes, or until the mixture gets thick enough to coat the back of a spoon, keep cooking on low heat
Taking it off the heat, add the vanilla extract and mix it in
Through a fine-mesh sieve into a clean bowl to get rid of any lumps
Cover and put in the fridge until it's completely cold, preferably overnight
Once the mixture is cold, use an ice cream maker according to the directions that came with it
Add the chopped mix-ins in the last few minutes of churning
Move the churned ice cream to a container that can go in the freezer
Freeze for 4 hours or overnight, until it is firm
